Ingredients
2.5 cups shredded rotisserie chicken
½ sweet onion, diced
1 ½ cups carrot, diced
1 ½ cups celery, diced
4 cups riced cauliflower (1lb. bag or medium head)
1 cup Frank’s RedHot Buffalo Wing Sauce
1 cup avocado mayo (I like Primal Kitchen or Sir Kensington’s)
1 tsp. salt
½ tsp. black pepper
Preparation
Preheat oven to 375. Add all dry ingredients (except salt and pepper) into large bowl. Mix mayo and wing sauce with salt and pepper in a separate bowl and combine with dry ingredients. Stir well to incorporate all ingredients together. Transfer mixture into 9×13 baking dish or 3qt casserole dish. Bake for 45 minutes covered and 15 minutes uncovered.
