As much as I dislike the cold, I sure do love soup.
It is VERY cold here in Chicagoland, and with that chilly weather comes the overwhelming urge to make SOUP! That urge has had me cooking in our AKOS Nutrition test kitchen, and I am pleased to report those cooking sessions have produced this next recipe.
Well, my friends, we have a new addition to our arsenal of delicious and super-simple recipes. We warmly welcome the newest recipe to join the ranks of AKOS Nutrition: Creamy Sweet Potato Soup!
Even better, this is a soup you can make right in your InstantPot (or your crock pot if you haven’t joined the InstantPot revolution)! Plus, unlike most creamy soups, this recipe is 100% dairy-free….. but trust me, you wouldn’t know it!
Enjoy this amazingly simple (and delicious) sweet potato soup recipe. You can keep the recipe as-is, or you can add chicken. Either way, you can’t go wrong.
AKOS InstantPot Sweet Potato Soup
Paleo, Whole30
Ingredients
3 lbs sweet potato, rough chopped
1 onion, rough chopped
3 stalks celery, rough chopped
3 medium carrots, rough chopped
1 Tbsp. garlic, minced
5 cups chicken bone broth
1 cup full-fat coconut milk
1 tsp sea salt
½ tsp black pepper
Directions
1. Place all ingredients in your InstantPot. Mix to incorporate all ingredients fully
2. Choose the soup/broth option on your InstantPot and set the time for 35 minutes.
3. Release the pressure for approximately 5 minutes after cooking has finished.
4. Once pressure has reduced, use an immersion blender until soup is creamy.
5. Serve and enjoy!
Notes
You can add a protein source (such as chicken) to this recipe. Place chicken breast on the top of all vegetables before starting your InstantPot. Remove chicken breast once the soup has finished cooking and shred separately and then reincorporate into the soup once you have used the immersion blender to create a smooth and creamy base.
If making this soup in your slow cooker, run on low for 8 hours or high for 4.
