AIP-Friendly Loaded Sweet Potatoes
Meal Prep Monday – July 22nd, 2019
- 2 pounds grass-fed ground beef
- 1 sweet onion, chopped
- 4 Medium Sweet Potatoes
- Sea Salt, to taste
- 4 Garlic cloves, minced
- 1 medium avocado, chopped
- Fresh chopped chives
Preheat the oven to 400° F. Wash the sweet potatoes and pat them dry, poking holes in each with a fork. Place them onto a parchment-lined baking sheet and bake for 45 minutes. Remove from the oven and set aside to cool. Lower the oven temp to 375°.
While the sweet potatoes are cooking, brown your ground beef in a skillet. Once beef is almost cooked through, add the onions and cook until translucent and then add salt and minced garlic. Mix and cook for a few more minutes.
After potatoes have cooled, split them lengthwise and place each half faceup on a greased 9×13 baking dish.
Scoop the meat mixture on top of each half and bake them for 20 minutes.
Serve with diced avocado and chives.
